vinification
All fruit was hand-picked and whole-bunch pressed. Fermentation took place in stainless steel for around 14 days prior to malolactic fermentation which only took place on select tanks. Bottle-fermented and lees aged for a minimum of 18 months prior to disgorgement.

Fresh aromas of ripe, red berries, toasted brioche and honeyed blossom
palate
The palate offers red apple and brioche notes, well integrated acid and a delightfully dry finish. Longer lees aging provides finesse, structure, and harmony of flavor.

Pairs perfectly with hors d’oeuvres and starters, great with a myriad of cheeses and red berry puddings.
